Virginia-native Wilson fell into cooking almost by accident while working at a plantation and farm near his Alexandria home. When a large wedding reception left the farm’s chef short-staffed, Wilson jumped in to help out, and he impressed his boss so much that she kept him on her catering staff throughout his college career. Though he studied business management and computer science, the lure of the kitchen was too strong to resist, and Wilson went on to graduate from the Culinary Institute of America and work in fine kitchens across the American Southeast.
“I really love to cook Southern food and barbecue,” says Wilson, who’s done stints at the Charleston Place Hotel in South Carolina, at Colorado’s Broadmoor Hotel and at the Windsor Court Hotel in New Orleans, among others. “I will always find a way to utilize the techniques and ingredients from those cuisines in my menus.”
After joining the Kimpton family in February 2013, Wilson returned to his hometown to cook at Jackson 20 in Old Town Alexandria. Trading colonial charm for Miami sizzle, he joined The Social Club in 2014. When he manages to find some free time, Chef enjoys taking his wife out to dinner, seeing live music and going deep-sea fishing with his dad.
