Bruny Rosado is currently the Regional Corporate Chef for Planta Restaurants which is part of Chase Hospitality Group. Planta is a restaurant group of plant-based restaurants based out of Canada. She studied the culinary arts in Le Cordon Bleu Institute. She started her career in San Juan, Puerto Rico working in Verde Mesa, a James Beard Award-nominated restaurant. After working in Puerto Rico she decided to relocate to New York City. Here she worked in Mercer Kitchen with Chef Jean-Georges. She also worked in Santina with Chef Mario Carbone with Major Food Group. She then found her passion in Mexican cuisine as the executive Chef of Puesto. She enjoys learning about cultures through their street food. She submerged herself in Mexican culture to learn the regional flavors and techniques. Her goal is to bring her knowledge together with local farmers to create truly fresh and unique plates.
