Executive Chef, W South Beach Hotel & Residences

In his position as Executive Chef of the W South Beach Hotel & Residences, Joshua Gripper oversees all aspects of the property’s culinary operations, including the menu of The Dutch, part of acclaimed chef Andrew Carmellini’s NoHo Hospitality empire. A large and demanding role for a chef of his age, 37, but an amazingly impressive responsibility considering he first rose to prominence as a pastry chef.

 

A native New Yorker, Gripper jump started his career as a child baking for his family in Jamaica, Queens. These formative years sowed the seeds for his acclaimed career, but also instilled him in a respect for process when it came to cooking and attention to details; skills also very much in demand as a hotel executive chef. A graduate of the Art Institute of New York City (formerly the New York Restaurant School), Gripper joined the opening team at Butter restaurant, and went on to Cafe Boulud where he joined Pastry Chef Eric Bertoia and then Chef de Cuisine Andrew Carmellini.

 

After honing his craft while spending time in France working at Provence’s famed Michelin two-star restaurant Oustau de Baumanniere, he returned to the states and was tapped by Daniel Boulud to serve as pastry chef of db bistro moderne. He later teamed up with Carmellini again in New York where he applied his academic knowledge and personal experience to Italian cuisine at Carmellini’s award-winning A Voce. Moving to South Florida after a year there, he enjoyed a stint at Alfred Portale’s Gotham Steak at the iconic Fontainebleau Miami Beach before rejoining Carmellini at The Dutch’s Miami outpost at the W, which opened in 2011. Rave reviews for his work in pastry followed as did an ardent following. While he continued to wow patrons with desserts, Gripper’s curiosity about the savory side of cooking piqued and he began to work more in that vein, becoming co-chef with then Chef de Cuisine Adonay Tafur. In that role he became increasingly more involved in all aspects of the hotel, and The Dutch’s food operations, while continuing to oversee The Dutch’s pastry program.

 

Now, in his new appointment as Executive Chef, which began in September 2018, he is responsible for managing all culinary operations including the execution of menus and catering for banquet functions, in-room dining and the resort’s venues: WET bar & grill, Beach Cabanas, Living Room, The Dutch and Irma’s. Gripper’s signature style comprises a sophisticated, yet classic approach to comfort food with a taste of South Florida and the Caribbean. He is a regular participant in some of the most popular gastronomic events in the country, including the New York Wine & Food Festival, Food Network and Cooking Channel South Beach Wine & Food Festival, and Taste of the Nation South Florida, among others.
