Josie Smith-Malave, Hialeah-raised and New York-trained, spent time in top kitchens such as Jean-Georges Vongerichten’s Vong and Wylie Dufresne’s WD-50 and competing on TV’s “Top Chef.” She launched her own place in 2016 with partner (and now wife) Marcy Miller, and they have triumphed with the effervescent joy of good vibes, good food and good libations. The feat and flavors are more impressive considering Smith-Malave works from a kitchen the size of a closet with no gas burner or proper grill, just two flat-top electric griddles, two convection ovens and a sous-vide cooker. That is mad talent.
