Vegan Chex Mix, with Pistachio Chewy Bites

Anytime you’re having a few friends over – bust out this delicious party snack! It doesn’t take very long to bake, but tastes like you spent hours in the kitchen crafting your perfect mix. If you’re expecting gluten-free guests, this dish can easily be adapted with rice chex and gluten-free pretzels.

Pistachio Chewy Bite Chex Mix

Serves 6-8


  • 4 cups organic wheat waffles cereal (or rice Chex if gluten-free)

  • 2 cups salted mini pretzels (gluten-free or wheat)

  • ¼ cup non-hydrogenated vegan butter

  • ¼ cup evaporated cane sugar

  • ½ teaspoon sea salt

  • 1 teaspoon vanilla extract

  • 6 Setton Farms Pistachio Chewy Bites

  • 1/3 cup dark chocolate chunks


  • Preheat oven to 325°.

  • Heat a small pot, over medium-low and add vegan butter. Cook for about 2 minutes to melt. Remove from heat and set aside.

  • In a large bowl, add organic wheat waffles cereal (or Chex), and pretzels. Add sugar, sea salt and vanilla. Pour butter over mixture and gently fold to incorporate.

  • Spread out mixture on on a parchment lined baking sheet and bake for 15 minutes, stirring every 5 minutes. Remove from heat.

  • Chop each Pistachio Chewy Bite into 8-10 pieces. Fold into cooled mixture, with chocolate chunks and stir well, mixing until uniform.
