Vegan Chex Mix, with Pistachio Chewy Bites
Anytime you’re having a few friends over – bust out this delicious party snack! It doesn’t take very long to bake, but tastes like you spent hours in the kitchen crafting your perfect mix. If you’re expecting gluten-free guests, this dish can easily be adapted with rice chex and gluten-free pretzels.
Pistachio Chewy Bite Chex Mix
4 cups organic wheat waffles cereal (or rice Chex if gluten-free)
2 cups salted mini pretzels (gluten-free or wheat)
¼ cup non-hydrogenated vegan butter
¼ cup evaporated cane sugar
½ teaspoon sea salt
1 teaspoon vanilla extract

1/3 cup dark chocolate chunks
Preheat oven to 325°.
Heat a small pot, over medium-low and add vegan butter. Cook for about 2 minutes to melt. Remove from heat and set aside.
In a large bowl, add organic wheat waffles cereal (or Chex), and pretzels. Add sugar, sea salt and vanilla. Pour butter over mixture and gently fold to incorporate.
Spread out mixture on on a parchment lined baking sheet and bake for 15 minutes, stirring every 5 minutes. Remove from heat.
Chop each Pistachio Chewy Bite into 8-10 pieces. Fold into cooled mixture, with chocolate chunks and stir well, mixing until uniform.
