Getting GLAM: Midtown Miami's Hottest New Plant-Strong Spot
GLAM is Midtown Miami’s hottest new restaurant — but there’s more to this spot than mouthwatering meals. This is an eatery with a mission, summed up in its name: Green Living Animals Matter.
Founded by Owner/Designer Janette Miller and Chef Todd Erickson, the violet and gold-accented spot was dreamed up by long-time vegan Miller, who recruited renowned culinarian Erickson to handle the menu.
“Janette wanted something chef-driven that was accessible to everyone, not just vegans,” Erickson told the Miami New Times about the concept. He went on to describe the menu as “organic, flavorful, and craveable. I don’t want it to feel like you’re only eating it to be healthy. I want it to be warm, hearty, delicious and satisfying.”
Erickson has long been a friend of Seed, and his veggie burger won the title of Best Veggie Burger in the U.S. at the 2015 annual Burger Battle. Seed hosted an event at this newly opened eatery back in July.
GLAM's menu is omnivore and vegan-friendly and includes snacks, soups, flatbreads, toasts, bowls, and sweets — plus shakes, beer and wine, and cocktails. There’s the jackfruit taco ‘al pastor’ with tomatillo salsa and tofu cream; chilled kelp noodles with almond, coconut, sriracha, radish, and ginger; daily soups like tortilla and butternut squash; a ‘sausage’ and pepper flatbread with grain-bean Italian sausage, bell peppers, and marinara; avocado miso toast; chana masala with chickpeas, garam masala, mango, tomato chutney, papadum, and quinoa; and an ube pie with purple sweet potatoes and gingersnap crumble that perfectly matches the decor.
Everything is made in-house; Erickson and team have a commitment to artisanal creations. The jackfruit for the tacos, for example, is cooked with onions, garlic, and other spices; roasted; them marinated with spices, beer, jalapeño, and caramelized pineapple before being cooked down.
The eatery is also committed to being "green," sticking with gold matte reusable tableware and a staff that wears all-vegan attire.
All in all, GLAM is the perfect place to take eaters of all persuasions. With food this delicious, it's easy to win people over to the idea that green living counts, and animals matter.
