New Liquid Vegan Scrambled Egg Coming Soon to Stores

Miss your fave egg scramble for daily brekkie? Scrambled tofu is always awesome, but if you're looking for something more like the eggs you're used to -- JUST Scramble is on its way.

JUST (formerly Hampton Creek) -- the maker of JUST Mayo (among other products) has been perfecting its egg product for several years. Now, the scramble has hit some restaurants in San Francisco, Hong Kong, and D.C., and it'll be on store shelves shortly.

Made with mung beans, it comes in liquid form and essentially does everything an egg can do.

"Ultimately, we want to mimic the full functionality of an egg," Andrew Noyes, JUST's head of communications, told Food Dive.

Where it's available, it's already popular! According to JUST, adding the item to a restaurant's menu increased total breakfast sales by 13%, while egg-related dishes went up by 42%.

“It’s not every day you see something that blows your mind,” chef and restaurateur José Andrés said about the product.

At a recent event at Washington D.C.'s Equinox restaurant, attendees got to try custard or bearnaise sauce, "huevos" rancheros and an "egg" and cheese sandwich on English muffins.

If you want JUST Scrambled to hit your local retailers faster, you can go to this special website where you can request it from your favorite stores. Thus far, it's been accepted for sale by Veggie Grill, Sysco, Wegman's, Aramark, and Lucky, among others.

The company says they're preparing to scale up production in a major way -- so JUST Scramble is likely to change the egg game, and soon.
